The Martinez family has been growing Catuaí, Catimor, and IH90 varietals intercropped with native forest, lime, orange, and avocado since the early ’90s and is now run by Adilia Martinez Gomez and her husband Felipe Martinez. The coffees come from an 11-year-old plot and cherries were handpicked and processed as honey before being shade dried for 20 days. Adilia has a strict regimen of biannual fertilizing, which allows her to achieve good yields and protect her 9000 trees from pest and disease damage. In addition to this, she integrates coffee pulp back into the soil, which improves the soil structure and nitrogen levels. Wastewater from the processing is collected for fumigation around the farm, or disposed of in evaporation tanks, where the residual organic matter is used to farm Red Californian earthworms.
