Traditionally the Ethiopian coffee industry has been controlled by government and big business meaning the little guy rarely got a fair price and this was an ambiguity to what was regionally labelled.

In 2017, with government policy reform, small holder groups such as JABANTO with 29 farmer were formed to own the whole process from farm to export. The range and number of coffee varietals in Ethiopia is immense - like a jelly belly flavour wheel - and farmers will pick and mix rather than cultivating separately, resulting in the expanse of exciting and unique flavours that we find in Ethiopian coffees. It is nearly impossible to track the exact varietals.
